to make the buckwheat hot cakes you’ll need —
4 eggs, separated
¾ cup almond milk
1 cup buckwheat flour
1½ tsp baking powder
¼ tsp sea salt

in a large bowl, whisk together the egg yolks, almond milk, buckwheat flour, baking powder & sea salt with a whisk.

in a separate medium-sized bowl, whisk the egg whites until very stiff & then fold through the hotcake batter.

cook the hot cakes in a hot pan with a little ghee or coconut oil, about 30 seconds each side, and until golden. –
