BUCKWHEAT CREPES⠀


INGREDIENTS⠀

1 1/4 cups flour (I’ve used 1 cup of buckwheat flour + 1/4 cup spelt flour)⠀
2 cups milk of your choice⠀
1 egg⠀
1/4 tsp vanilla⠀
A pinch of sea salt⠀


METHOD⠀

Whisk the ingredients together in a mixing bowl until super smooth, allow the mixture to rest for 10-15 minutes.⠀
Add a tiny bit of coconut oil or butter to a non-stick pan on medium to high heat.⠀
Roughly add 3/4 cup of the crepe batter and swirl around your pan so it thinly coats the pan. If it feels a little thick whisk a little more milk into the mixture. Also, I find the first crepe or pancake is always a dud (why is that?!) so don’t worry, the rest will be great!⠀
Once little bubbles begin to surface on the crepe flip it over and cook for roughly 30 seconds.⠀
Remove from pan onto a plate and set aside.⠀
Cook the rest of the mixture and serve warm with yoghurt, pure maple and your favourite fruit.⠀
